Mini Chile Rellenos Casserole with Goat Cheese


This is an easy recipe for breakfast or dinner. It makes two mini casseroles, but it can easily be doubled. The original post is from the The Finessista.

Ingredients:

-3 eggs
-1/4 C milk of choice
-2.5 oz soft goat cheese
-2 green chiles (I used Poblano. roasted, seeded and chopped)
-1 T flour
-1/2 t oregano
-1/4 t sea salt
-splash of hot sauce
Mix all of the ingredients.
You'll want to crumble up the goat cheese so the pieces aren't too big.

Pour into two greased ramekins.
Bake at 350 for 30-40 minutes. 
Serve with some additional salt and pepper.
This casserole was fantastic! The size was a perfect portion for one person and the salty goat cheese mixed with the spice from the peppers made for a really good flavor profile. I love dishes made in ramekins because everyone gets their own personalized meal.
