Farmer's Lunch Sandwich


If you're stopping over from Food on Friday the Onion-Thyme Jam recipe is below, it's great on sandwiches and didn't last very long in my house because it was so tasty!

I am a sucker for a good vegetarian sandwich. What's not to love about a sandwich? The only problem with sandwiches is that it's difficult to find a good vegetarian sandwich...but here is the answer to the vegetarian sandwich problem.

According to the original post from The Kitchn says that this sandwich has been adapted from a deli menu at City Feed and Supply in Boston. I won't lie to you, this is my new favorite.

Ingredients:
Sandwich
-1 loaf crusty baguette or ciabatta
-Whole grain mustard
-Sharp cheddar cheese
-Butter lettuce
-2 hard, tart apples like Granny , very thinly sliced
-2 to 3 tablespoons lemon juice
-Onion-Thyme Jam (recipe also from The Kitchn)

Onion-Thyme Jam (will make 1 cup, I cut the recipe in half)
-2 tablespoons unsalted butter
-2 tablespoons olive oil
-4 medium sweet onions, chopped (about 4 cups)
-2 tablespoons fresh thyme leaves (or 1 1/2 teaspoons dried)
-1 bay leaf
-1 roasted garlic clove, mashed (optional)
-Kosher salt
-Freshly ground black pepper
-1/4 cup apple cider vinegar
-2 tablespoons brown sugar

Start the onion-thyme jam, heat butter and oil in a pot. Add onions,  thyme, bay leaf, garlic, salt and pepper.
Cover and cook for 20 minutes on medium-low heat.
Add the vinegar and sugar, continue to cook uncovered stirring frequently for about 20 more minutes.
Remove the bay leaf.
Transfer to a bowl and let cool to room temperature.
This can be stored in an airtight container in the fridge for a few days.
Spread the grainy mustard onto your bread.
Add apple slices.
Lettuce.
Onion-thyme jam.
White cheddar.

The tartness of all of the ingredients combined with the acidity of the mustard and onion-thyme jam is like heaven in your mouth. Seriously, this is a recipe you won't regret trying. These ingredients also make a really great grilled cheese. The onion-thyme jam didn't last long in my house at all, my brothers and I ate it on everything! If you're looking for a great meat-free sandwich this is the recipe for you!
