Chocolate Mint Cookies



I'm really a fan of mint, so this cookie sounded pretty good. They actually use cookies right in the recipe, mint Oreo cookies, which until I found this recipe, I didn't know they made. This recipe comes from another one of those blogs with a name I really like, i heart eating. The best part about these cookies was how the dough smelled while I mixed it and while they were baking, like mint chocolate chip ice cream. They tasted kind of like Girl Scout cookies when they were done.

Ingredients:
-1 cup butter, at room temperature
-1 cup brown sugar (I realized I was out of brown sugar after I started making this, but using regular sugar instead worked out fine for me)
-1/3 cup granulated sugar
-2 large eggs, at room temperature
-1 Tbsp vanilla extract
-2 1/2 cups all-purpose flour
-1/2 cup unsweetened cocoa powder
-1 Tbsp cornstarch
-1 1/2 tsp baking soda
-1 tsp kosher salt
-1/2 cup mint chocolate chips
-1 cup chopped mint Oreos

Crush up the Oreos. I put them in a Ziploc bag and just
broke them up.
Mix the butter and sugar in a blender. Blend in the eggs and vanilla.
Mix in the dry ingredients, including the cookies and mint chips.
Refrigerate for at least 3 hours. I haven't tried this without the
refrigeration, I would be curious to know how what kind
of a difference it actually makes.
Spoon them out onto a baking sheet. Bake at 350 for 9-12 minutes.
The original recipe said 8-9 minutes, but I found that I needed a
little longer. They also didn't spread out much on tray, so it
is OK to put them pretty close together.


These cookies were a pretty big hit with everyone that tried them. I put them in a tupperware and ate them for at least a week, they were still good, I would recommend this recipe.
