Mini Twiced Baked Potatoes


We are getting close to the 2 year anniversary of this blog! So for the next 2 weeks we have some recipes that we have remade some of our old recipes and gave them a new twist, then we will have some retries of recipes that went wrong. This was a remake of one of my favorite recipes Twice Baked Red Potatoes, but with the twist of making a spicy version.

Ingredients:
-bag of mini red potatoes
-sour cream
-cheddar cheese
-chipotle pepper
-hot sauce

Bake the potatoes in the oven at 450 for 30 minutes.
Take the potatoes out, and once they cool, cut them in half, and, scoop out the middle.

Mix the middle of the potatoes with the other ingredients.
I just used a little of each until it looked to be a good consistency.
Use as much chipotle pepper and hot sauce to your taste.
Scoop the mixture back into the potatoes. Top with some more cheddar cheese.
Bake again for 15 minutes.



I've seen a time or two recently at restaurants potato skins with hot sauce on them, I think this is something pretty new, but I think it's a good idea. These little red potatoes are still one of my favorite things to make, and I'm still looking for new ways to use them.
