Georgia Peach Cobbler



While we were in Georgia last week my best friend put together this peach cobbler for dessert one night. It was incredibly easy to make and Dave was happy to finally be eating peaches.

We served this after a dinner of Tortellini Bake with a side of Garlic Naan from Trader Joe's.

Ingredients:
-4 cups peeled, sliced peaches
-2 cups sugar, divided
-1/2 cup water
-8 tablespoons butter
-1 1/2 cups self-rising flour
-1 1/2 cups milk
-Ground cinnamon, optional

Add peaches, one cup of sugar and water to a sauce pan. Mix. Bring to a boil and simmer for 10 minutes. Remove from the heat and stir the peaches. In a pie pan add the butter and place in the oven at 350 to melt it.

Mix remaining 1 cup sugar, flour, and milk slowly.  Pour over the melted butter. DO NOT STIR.

Add the peach and syrup mixture over top. Sprinkle with cinnamon. Bake at 350 for 30-40 minutes.
















Sara said this isn't the cobbler recipe that she normally uses -- she and her husband thought it would have been better with more peaches. I personally liked it, I'm not a huge fan of peaches so I thought the subtle amount was better. Serving this with ice cream was a great way to eat it.
