Stuffed Crust Skillet Pizza


Dave and my first argument (if it could be called that) may have been about this pizza. I was trying to brainstorm creative and colorful toppings that would go well with pineapple. He suggested kiwi and I laughed. He thought that I was the crazy one for thinking kiwi would be a mistake. Google proved me wrong, other people have used kiwi as a pizza topping paired with pineapple.

As the victor in our debate, Dave insisted on adding mango for good measure. This skillet pizza was the first time I made pizza in a skillet and it was also my first experiment with a savory fruit pizza.

Ingredients:
-Refrigerated pizza crust
-Olive oil
-Small can of pizza sauce*
-3 cups of grated mozzarella
-Slices of mozzarella cheese (to make the stuffed crust)
-1 mango
-1/4 pineapple
-1 kiwi
-Crushed red pepper

*I didn't list exact amounts of sauce and cheese because you can use as much as you want. I don't like a lot of sauce on my pizza, but you might! Same with cheese.

Greased the cast iron skillet with olive oil.
Spread the pizza dough into the pan, stretching it out over the sides of the skillet.
Cut all of the fruit into small bite sized pieces. 

Spread sauce at the bottom of the pizza.

Add cheese.

Add the mango, pineapple and kiwi.
  
Top with additional cheese and the crushed red pepper.
Roll the mozzarella slices into the crust, going all the way around until the entire outside edge is filled with cheese.
Brush with olive oil. 

Bake at 400 for 30-40 minutes or until crust is golden and cheese is melted.
Let sit 10 minutes.

    


The crust on this turned out fantastic, it was cooked all the way through and wasn't too thick on the bottom. The cheese that was stuffed into the crust melted nicely. The pineapple and mango were the best pizza toppings. The kiwi got weirdly sour during the baking process. It wasn't awful, but it didn't go well with the other two fruits which were more sweet. I was really happy with how this turned out and will be making more skillet pizzas in the future.
