Creamy Tomato Basil Bisque


There is a local chain restaurant with several locations near us -- every time I go I order the same thing. They serve a wonderful tomato basil bisque and although I have tried several times to recreate it, I just can't get the recipe close. The restaurant bisque is perfectly creamy and has a nice amount of roasted red pepper.

This recipe was good and would be nice served with a grilled cheese. However, this didn't quite live up to my restaurant copy that I was hoping for, I'll have to keep trying.

Recipe from Basmati Taco.

Ingredients:
-1 large yellow onion, chopped
-1 sweet red pepper, chopped
-2 (14 1/2 oz) cans diced tomatoes
-2 medium plum tomatoes, chopped
-2/3 cup basil, chopped
-3 tbs sugar
-1 1/2 cups cream
-Salt and pepper

Melt butter in a large pot and saute the pepper and onion.

Add the fresh tomatoes and diced tomatoes. Stir and reduce the heat. Cover for 40 minutes.



Once the 40 minutes is over, add sugar, basil, salt and pepper and stir. Using an immersion blender, blend the soup until smooth. Stir in the cream.


I served my soup with a little shredded gouda on top. This soup was good overall, but it's not something that I really want to make again. I would recommend serving this with a grilled cheese sandwich.
