Cauliflower + Hazelnut Soup with Fried Sage


Happy Soup Wednesday! If you've been reading the blog for a while, you know that Soup Wednesday is my favorite Wednesday series. I just love curling up with a steaming hot cup/mug of soup on a cold Ohio day. There are also endless options for vegan/vegetarian soup recipes, which helps to make this really fun.

Ingredients: 
-2.5lb cauliflower head (about 8 cups), chopped
-1 small leek, chopped
-1 large garlic clove, minced
-a couple of tablespoons of olive oil
-salt + pepper
-8 cups of vegetable broth
-1/2 cup of toasted hazelnuts (plus 1-2 tablespoons additional for topping)
-1-2 tablespoons of lemon juice
-6-8 sage leaves
-1-2 tablespoons of vegetable oil

Place the leeks and garlic in a large pot over medium heat with some olive oil. Saute for about two minutes. Add in the cauliflower and season generously with salt and pepper. Cook for about 10 minutes, stirring occasionally until the cauliflower starts to brown. Add in the vegetable broth and bring to a boil. Reduce to a simmer, place a cover loosely over the top and cook for about 20-30 minutes.

Use an immersion blender to puree the soup until almost smooth. Throw in 1/2 cup of hazelnuts and 1 tablespoon of lemon juice. Use the immersion blender to blend again until smooth.

In a small frying pan, heat the oil to fry the sage. Fry the sage leaves for about 2 minutes on each side until they become nice and crispy. Remove and place on a paper towel to drain.

Pour the soup into bowls and top with hazelnuts and crispy sage.






This was a great soup to start off the 2015 Soup Wednesday series. I would have never thought to pair cauliflower and hazelnuts together, but the flavor works nicely. The crispy sage over the top was a nice touch as well, it adds nice texture to the soup and frying the sage helps to mellow the flavor of it a bit.
