Lemon Dill Roasted Turnip Tacos


I had a difficult time finding turnips at our local grocery store, by the time I backtracked through the produce section to finally find the bags of turnips nestled with the carrots I had the following exchange with another patron:

Me: "Yes, I finally found turnips."
Man:"....? May I ask what you're making that has made you so excited about turnips?"
Me: "I'm a vegetarian. Turnip tacos."
Man: walks away shaking his head "Turnip tacos, who knew?"

Turnip tacos indeed.

Recipe from Rooting the Sun.

Ingredients:
-1 lb turnips, peeled and diced small
-1 tsp olive oil
-zest of 1 lemon
-juice of 1/2 lemon
-1 tablespoon minced dill
-1/2 teaspoon chili powder
-1 cup black beans
-1/2 teaspoon onion powder
-1/2 teaspoon cumin
-juice of 1 lime
-spinach
-goat cheese
-corn tortillas

Preheat the oven to 425 and in a medium whisk together the oil, lemon zest, lemon juice, dill, and chili powder. add turnips and toss to coat. On a large baking sheet lined with parchment paper, lay the turnips out and roast in oven 15-20 minutes, until browned.

Heat up the black beans and season with cumin, onion powder and lime juice. Mash the beans.

Assemble the tacos with the mashed beans, spinach, roasted turnips. and goat cheese.




This won over even Dave who is a turnip hater enjoyed these tacos. This was such an interesting mix of flavors and I really enjoyed the dill and lemon paired together. So grocery store man, if you're reading this, the turnip tacos turned out awesome and were filling, you should check them out.
