Ginger Cherry Vodka Cocktail


We purchased cherries for another recipe and couldn't figure out the most effective way to use them. I thought about making some sort of baked dessert but I always hate to make a big batch of something when it's just the two of us. I settled on turning half of the bag into simple syrup, with some of the syrup going into this cocktail and the rest into a sorbet. This cocktail was good, the simple syrup isn't overly sweet and the ginger beer helps to balance the sweetness in the drink. All of the ingredients in the cocktail can be adjusted to taste.

Recipe slightly adapted from Half Baked Harvest

Ingredients: 
Cherry Infused Simple Syrup
1 cup fresh cherries, pitted
1 cup water
3/4 cup sugar
1 tablespoon honey

Cocktail
-3/4 cup ginger beer
-2 tablespoons cherry simple syrup (or more depending on your taste)
-1.5 ounces vodka
-1 tablespoon lime juice
-fresh cherries for garnish

To make the simple syrup combine the cherries, water, sugar, and honey in a medium sauce pan. Bring to a boil and once boiling remove the sauce pan from the heat. Allow to cool slightly and then remove the cherries from the mixture with a slotted spoon and discard. Chill the simple syrup until you're ready to make the drink.

Add the ginger beer, cherry infused simple syrup, vodka, and lime juice to each glass. Stir to combine and then add ice.
