Roasted Tri-Color Beans


For the last three CSAs, we've received beans -- green beans, wax beans, and purple beans. Dave wanted to keep things simple and serve the beans as a side so I tossed them with pesto and roasted them in the oven. This side dish couldn't have been faster or easier to make! The pesto adds a lot of flavor and keeps this recipe simple but you could also add additional toppings like toasted nuts for an added crunch.  

Ingredients:
-1/2 pound of tri-colored beans ends removed
-3 tablespoons basil pesto
-Salt + pepper to taste

Preheat the oven to 400 degrees. Trim the ends of the beans and cut any that are too long in half. Toss the beans in the basil pesto and spread them out on a baking sheet covered in foil in a single layer. Roast for 15 minutes in the oven and serve immediately.
