Apple, Sage, + Mushroom Pizza

Ingredients:
-Refrigerated pizza dough
-7 ounces ricotta cheese
-1 tablespoon olive oil
-10-12 fresh sage leaves
-8 ounces button mushrooms, sliced
-2 ounces shiitake mushrooms, sliced
-1 teaspoon smoked paprika
-1 apple, sliced thin
-Honey
-Salt and pepper

Preheat oven according to pizza dough package instructions.

Heat a tablespoon of olive oil in a pan over medium heat and add the sliced mushrooms to saute. Stir in a dash of salt and pepper, along with the smoked paprika, and cook for 8 to 10 minutes, until most of the liquid that will release from the mushrooms evaporates. Remove the pan from the heat.

Stretch out the dough on a parchment paper-lined baking sheet or other large baking surface, then spread the ricotta cheese over the top. Evenly lay slices of apple on the pizza, followed by the sauteed mushrooms. Cut the fresh sage leaves over the pizza to roughly disburse. Bake for 15-20 minutes, then finish with a touch of honey to serve.
