Rhubarb Vodka Cocktail


It's time for our farmer's market's outdoor season and I picked up a gorgeous bunch of rhubarb on Saturday. Although I have many rhubarb dessert recipes pinned on Pinterest, I wanted to branch out a little with this bunch. Dave remembered seeing this cocktail on Food Network and I also have plans for a savory rhubarb dish for dinner tonight. This cocktail is incredibly easy to make but if you're not serving a crowd you may end up with a lot of extra rhubarb simple syrup (I'm working on something for this too). The flavors are tart but go well together. Overall, this was the perfect accompaniment for Sunday night Game of Thrones.

Ingredients:
-1 1/4 ounces Rhubarb Simple Syrup, recipe follows
-1 1/2 ounces vodka
-1 ounce lime juice
-1/2 teaspoon diced fresh ginger
-1/4 ounce pomegranate juice
-1/3 stalk rhubarb

Rhubarb Simple Syrup
-1 stalk rhubarb, cut into 2-inch pieces
-1 cup sugar

Add the Rhubarb Simple Syrup, vodka, lime juice, ginger, and pomegranate juice to a cocktail shaker. Muddle the ginger, add ice and shake thoroughly. Strain into a glass with ice, then garnish with a rhubarb stalk and serve.

Rhubarb Simple Syrup:
Add the rhubarb and 2 cups water to a small pot and bring to a boil. Reduce to a simmer and add the sugar. Stir until dissolved, then take off the heat. Let steep for 10 minutes, mash and strain, then let cool. Store in the refrigerator for up to 2 weeks.
