Hot Buttered Rum

One of my favorite local restaurants recently added hot buttered rum to their drink menu and I told Dave about how delicious the drink was after a girls night. He incorporated it into the Thanksgiving menu. Whenever we host we're big on incorporating a signature drink, but then having other things on hand or encouraging guests to bring their favorite. Although hot buttered rum isn't a traditional Thanksgiving drink, you could keep wine or some fall beers on hand as well to pair with the meal and this drink as an after-dinner cocktail.

Pair with: Kerrygold Potato Soup with Rosemary Butternut Biscuits.

Inspired by Craft and Cocktails.

Ingredients:-1 scoop (1/4 cup) vanilla bean ice cream
-1 tablespoon butter
-1 tablespoon brown sugar
-1 tablespoon confectioners sugar
-1/2 cup milk
-1/2 teaspoon cinnamon
-1/4 teaspoon nutmeg
-1 to 2 oz dark rum

As written the recipe above makes one drink, so double, triple, and quadruple the recipe as needed.

In a saucepan melt together the butter, brown sugar, and confectioner's sugar. Add the milk to the butter/sugar mixture and stir to combine. Now add the vanilla bean ice cream, stirring until melted. Finish off with the cinnamon and nutmeg.

Pour into a glass with 1 to 2 ounces dark rum, amount depending on your preference, stir and serve.

Top with an additional pat of butter for presentation purposes, or forgo that all together and enjoy the cocktail.
