Pepper Jelly Brie Bites
We were in charge of bringing an appetizer for New Year's Eve and planned to make the Cranberry Brie Bites that we made for Festivus 2017 but when we were getting everything ready we realized that we didn't have time to make cranberry sauce in addition to the recipe itself, so we decided to go in a different direction. These were a hit, but once again kind of exploded out of the mini muffin tin. Maybe they need to be pre-baked? We haven't figured out the magic formula for making them look better but the combination of brie, pepper jelly, and chive was a hit.
Inspired by Cranberry Brie Bites.
Ingredients:
-1 tube crescent dough
-Cooking spray, for pan
-Flour, for rolling out dough
-8 oz. wheel Brie (or Camembert),
-Pepper Jelly
-24 one inch pieces of chive.
Preheat oven to 375° and grease a mini muffin tin with cooking spray. On a lightly floured surface, roll out crescent dough, and pinch seams together. Cut into 24 squares. Place squares into muffin tin slots.
Cut brie into small pieces and place inside the crescent dough. Top with a spoonful of pepper jelly, and a piece of chive.
Bake until the crescent is golden, about 15 minutes.
Serve warm.
