Spicy Honey Glazed Carrots
Rainbow carrots are an ingredient that I always struggle to find at the grocery store but luckily Dave was able to pick some up at the farmers market when he picked up our last CSA. In addition to the locally grown carrots, this recipe was made with some local honey from The Bee Man. The end result was a colorful side dish full of caramelized honey flavor and a slight heat from the gochujang.

Ingredients:
-1/2 pound of rainbow carrots
-1 tablespoon honey
-1/2 tablespoon gochujang
-Red pepper flakes, optional garnish
Preheat your oven to 400°. Spray a foil-lined baking sheet with cooking spray and lay out the carrots in a single layer. Brush with half of the honey and gochujang and then roast for 15 minutes. After 15 minutes remove from the oven, flip, and brush with the remaining honey and gochujang and roast for another 10-15 minutes or until fork-tender. Serve with red pepper flakes if desired.
