Spiced Cranberry Paloma

                                                  

I love palomas and I thought this cranberry version was a fun twist for a Christmas dinner. In my effort to do as much prep as possible in advance, I made the spiced simple syrup the day before. Making the cocktail doesn't take too much effort so you can focus on making everything else. I wasn't sure how I would feel about the spiced syrup in this but it is subtle. I was also expecting more of a vibrant red color. I've been infusing some vodka on my counter for a Christmas shot and if I was making this again then I would infuse a bit of the tequila with cranberry for an even more Christmas-y color. The recipe below makes one cocktail but it's easy to scale.

Baked Brie with Fig, Walnut, and Pistachio

Ingredients:
Spiced Simple Syrup
-1/2 cup granulated sugar
-1/2 cup water
-2 cinnamon sticks whole
-2 whole cloves
-2 star anise whole
-1 vanilla bean split open

Spiced Cranberry Paloma
-2 ounces cranberry juice
-1 ounce fresh grapefruit juice
-1 ounce fresh lime juice
-1 1/2 ounce spiced simple syrup
-2 ounces tequila
-Sparkling water
-Ice

Garnish
-
A sprig of rosemary
-Grapefruit slice
-Cranberries

To make the simple syrup combine all of the ingredients in a small saucepan and bring to a boil until the sugar has dissolved. Set aside for 10 minutes then strain out the spices. 

To make the paloma, combine the cranberry, grapefruit, and lime juices in a shaker with simple syrup and tequila. Shake with ice. Pour into a sugar-rimmed glass filled with ice, top with sparkling water, and any desired garnishes.
