Zoodles with Fresh Marinara and Cherry Tomatoes


We've been receiving more zucchini than we know what to do with in our CSA box and other sources and Dave isn't always a fan of zoodles. His mom suggested microwaving each plate of zoodles for 90 seconds and we thought it turned out great, the zoodles still had a little bit of a bite to them, but they didn't turn into a wadded mess like roasting or sauteing them. Between the CSA tomatoes and my parents' bounty of tomatoes, Dave envisioned zoodles with a fresh tomato sauce.


We received:
-Zucchini/squash
-Japanese Turnips
-Potatoes
-Cherry Tomatoes
-White Onions
-Red Onion
-Garlic
-Tomatoes
-Mixed Greens
-Wax Beans
-Melon

Ingredients:
-1 zucchini, spiralized
-1 summer squash, spiralized
-6 tomatoes, diced
-1 head garlic, minced
-1 onion, diced
-1 shallot, minced
-1 jalapeno, small diced
-6 basil leaves, shredded
-salt and pepper
-grated creamy Toscano cheese infused with Syrah (or grated Parmesan)
-handful cherry tomatoes

Heat a small amount of oil in a large pan over medium heat, and saute the onion for five minutes. After a few minutes, add the shallot, garlic and jalapeno. Turn the heat down to medium-low and add the tomatoes, salt and pepper, and basil. Gently simmer until reduced, about 25 minutes.

Spiralize the zucchini and squash, divide between two plates, and microwave each on high for about 90 seconds. Divide the sauce between the zoodles, and serve with grated cheese and halved cherry tomatoes.
