Creamy Yogurt Kale Salad

This cool and refreshing salad packs bite, is crispy, tart and a little sweet, and has the creaminess of the yogurt that helps to bind components of every ingredient into each delicious bite.

Easy enough to make for one, or a fun and fresh way to serve a group, just multiply the ingredients below by the number of servings.

Ingredients: (per serving)
-1 cup kale, chopped
-1/2 apple, diced
-1 oz sharp white cheddar, small diced
-1/8 cup walnuts, crushed
-1 teaspoon dijon mustard
-1 tablespoon white vinegar
-1.5 tablespoons Greek yogurt
-pinch salt, cayenne

Wash and finely chop kale, then dice apple and cheddar. Mix dijon mustard, vinegar, Greek yogurt, and salt and cayenne pepper to taste. Layer dressing over kale or toss to distribute, then add apple, cheddar, and crushed walnuts.
