Mixed Green + Pear Salad
We're almost out of ingredients for our first week of the CSA and are looking forward to seeing what we receive next week -- although I know that the first CSA weeks will certainly bring more greens. I have two other non-salad posts ready for later this week but this easy to make salad is a great way to usher in the flavors of summer. We used pear juice in the dressing but if you have access to pear nectar that would be a great substitute. This was served as a side to the Avocado BLT posted earlier this week.

Ingredients:
-5 cups mixed greens
-1 medium green pear, cored and diced
-1/8 cup pear juice
-1 tablespoon olive oil
-1 tablespoon white wine vinegar
-1/2 teaspoon Dijon mustard
-Dash of ground ginger
-Dash of ground black pepper
-1/2 teaspoon honey
-1/4 cup broken pecans, toasted
-1/4 cup crumbled goat cheese
To make the dressing combine the pear juice, olive oil, white wine vinegar, Dijon mustard, ground ginger, ground black pepper, and honey. Whisk together.
In a large bowl combine the greens, diced pear, goat cheese, and toasted pecans. Divide the salad into four servings and top with the dressing.
