Shaved Brussels Sprouts Salad
I wanted something fresh to go along with the Golden Soup that I made for game night and this salad was the perfect complement. I haven't had a chance to use the shred blade of my food processor but it made making this salad an easy task. I was impressed with how easily and cleanly it sliced the red grapes. This salad had a nice mix of textures from the crisp, raw brussels sprouts, the crunch of the green apples, and the juiciness of the red grapes. This is a recipe I plan to make again in the new year! Dave and I have been trying to do a better job of always packing a lunch for work and this salad would pair nicely with soup or a sandwich.

Ingredients:
Dressing:
Whisk together the olive oil, red wine vinegar, salt, and pepper. Set aside.
Add the brussels sprouts to the food processor and pulse to shred. Dump the shredded brussels into a large bowl. Repeat with the green apple and grapes and gently stir together all of the ingredients with the dressing to combine. Top with the shredded Parmesan cheese and serve.
Salad:
-2 cups brussels sprouts (I used a blend of green and purple brussels sprouts).
-1/2 green apple
-1 cup red grapes
-1/2 cup shredded Parmesan cheese
Dressing:
-1/4 cup red wine vinegar
-2 tablespoons extra virgin olive oil
-Salt and pepper to taste
