Festivus Cocktail

This year was my 11th Annual Festivus party (held on Zoom, of course) so I thought adding a nod to Festivus would be a nice touch with this Christmas meal. I drank several of these during our Zoom event and was not sad about it. The original recipe calls for cucumber vodka but I just used regular vodka which is what I had on hand. The rosemary simple syrup adds a nice touch to this cocktail, but is not overly sweet.
Pair With
Goat Cheese with Honey, Fig, and Pistachios
Recipe slightly adapted from US Magazine.
Ingredients:
-2 ounces vodka
* For simple syrup: In a small saucepan, boil 1 cup sugar and 1 cup water until the sugar dissolves, about 3 minutes. Add a sprig of rosemary and stir for an additional minute before removing from heat to cool.
Combine the vodka, simple syrup, grapefruit and lime juices in a cocktail shaker with ice. Shake until you can feel the cocktail shaker turn cold, about 10 seconds.
Pour into a chilled glass, top with a dash or two of club soda, and garnish with a grapefruit slice and fresh rosemary.
-1/2 ounce rosemary simple syrup*
-3/4 ounce fresh grapefruit juice
-1/2 ounce fresh lime juice
-Ice
-Club soda
Garnishes: sliced grapefruit, sprigs of rosemary
