Goat Cheese with Honey, Fig, and Pistachios
It's almost Christmas! Which feels weird to say because all of 2020 just feels like it's been an extended March. In the spirit of the season and because like Thanksgiving many are doing smaller gatherings this year I've scaled back the Christmas menu to reflect a meal that can be enjoyed in a smaller setting. All of this was plenty for the two of us and can be adapted as needed. I also tried to focus on an easy appetizer that would be less labor-intensive than some of the recipes I've used in the past. We served this with red chili crackers from Trader Joe's which was a nice savory complement to the sweetness of the appetizer but your favorite cracker would work!

Ingredients:
-6 ounces fresh goat cheese log
-1/4 cup roasted pistachios, chopped
-1 tablespoon dried cranberries, minced
-2 tablespoons honey
-1 tablespoon fig preserves
-1 package red chili crackers or other crackers
On a flat surface, mix and spread the minced dried cranberries and chopped pistachios. Roll and press the goat cheese onto the cranberry and pistachio layer so that it is evenly crusted on the goat cheese.
Drizzle the honey over the goat cheese and top with the fig preserves.
