Vanilla Chai Tea White Russian

I can't believe it's almost the end of 2021 and time for Christmas recipes again. What another weird year that seemed to go way too fast. This year instead of a holiday meal I wanted to switch it up and put together a holiday brunch. This cocktail is the first post of five which will include two sides, a main dish, and a dessert. There are some items that can be prepped in advance and overall this was significantly easier than preparing the Christmas meal for past years. This boozy cocktail is a good way to start off the meal or to serve as a stand-alone beverage. The chai simple syrup can be made in advance and stored in the fridge until you're ready to serve drinks. This recipe makes one cocktail but can be scaled for more drinks.

Recipe from Half Baked Harvest

Ingredients:
Chai Tea Simple Syrup
4 chai tea bags
1/3 cup honey
1 teaspoon vanilla extract

Chai White Russian
2 ounces vodka
1 1/2 ounces Kahlua
1-2 ounces chai tea syrup
1-2 ounces  heavy cream
cinnamon sticks and star anise, for garnish

To make the simple syrup, Heat 1 cup of water to a boil (I did this in the microwave in a large pyrex measuring cup). Add the chai tea bags and steep for 15 minutes. Remove the tea bags and stir in the honey. Pour into a small saucepan and bring to a boil for 3-5 minutes. Stir in the vanilla and allow to cool.

To make the cocktail, fill a shaker with ice. Add the vodka, Kahlua, chai tea syrup, and heavy cream. Shake to combine and garnish with cinnamon sticks and star anise.
