Winter Fruit Salad
For the first holiday side dish, I wanted something light. Even with things slowing down a little this year I still feel like I'm going out and indulging way more than usual. This side is also incredibly easy to assemble and was the first thing I made the day we were prepping the holiday brunch. As written this makes six servings but it's easy to halve if you'd prefer to have three servings instead. Overall, I thought even with the dressing this was refreshing and a nice accompaniment to the other dishes we prepared.

-3 cups of cubed pineapple
-1 cup of peeled, quartered and sliced kiwis
-1 cup mandarin orange segments
-1 cup blood orange segments
-1 cup blood orange segments
-1/2 cup pomegranate arils
-3 tablespoons orange juice
-3 tablespoons honey
-1 tablespoon poppy seeds
Combine the orange juice, honey, and poppy seeds in a small bowl. Whisk to combine.
Add the fruit to a large bowl and then pour the dressing over the fruit. Stir gently to combine and serve.
