Spicy Wax Beans


These wax beans are just another instance of something showing up in our CSA that I wouldn't typically purchase. Wax beans are closely related to yellow beans and can be purple or yellow in color. The texture is also slightly different than the texture of green beans. For the most part you can prepare them in very similar ways so we kept this recipe simple and served it as a side dish to the Avocado Cucumber Sushi Roll from yesterday.

Recipe from The Kitchen Bowl

Ingredients:
-1 pound wax beans 
-2 tablespoons sesame oil
-1 1/2 tablespoon soy sauce
-1 teaspoon sugar
-1/2 teaspoon salt
-Chili flakes, to taste

Combine the sesame oil, soy sauce, sugar, and salt in a large bowl. Toss the wax beans in the sauce and coat them thoroughly. Cook the beans in a skillet over medium heat for about five minutes or until they are al dente. Take care cooking with sesame oil, as it has a lower smoke point than other oils and can burn more easily. Serve tossed with as many chili flakes as you'd like.
