Cranberry Chickpea Salad Sandwiches
Chickpea salad is such an easy way to make a protein-packed meal. This fall version incorporates cranberries and walnuts. I added a little kale for color too. When Dave bought onion rolls for this recipe I was skeptical but it ended up adding a nice layer of flavor to the recipe. A friend and I recently went to a wine and paint class and I made this for a quick dinner served with caprese pasta salad from our local grocery store and it was a hit! This is definitely something I will be making again maybe even as early as this week.
Ingredients:
chickpea salad:
-1 can chickpeas (15 ounces), drained and rinsed
-1/3 cup light Miracle Whip
-1/4 cup walnut pieces
-1/4 cup thinly sliced kale
-1/3 cup dried cranberries
-1 tablespoon lemon juice
-1/4 tsp cayenne pepper (optional)
For serving:
-4 onion rolls
-Salad green of choice
Combine all ingredients for the chickpea salad, and mix until uniformly distributed. Fill sandwich rolls with leaf lettuce or other green topped with chickpea salad.
