Obatzda


I have always loved Food Network but now that one of my favorite bloggers has her own show on Sunday mornings I love it even more. This obatzda (beer cheese dip) was part of Molly Yeh's recent Oktoberfest segment and while I'm not quite ready to make my own pretzels for a party this dip was amazing at Dave's birthday which had a beer and brats theme. This would be delicious with soft pretzels but we served it with original and everything flavored pretzel thins and it was a hit at the party. The dip is rich from the brie and butter but the seasonings help to round out the flavor.

Ingredients:
-8 ounces Brie, at room temperature, chopped into large chunks
-1 stick unsalted butter, at room temperature
-1/4 cup wheat beer
-1/4 cup heavy cream
-1/4 cup chopped fresh chives
-1 teaspoon smoked paprika, plus more for topping
-1/2 teaspoon ground caraway seeds
-1 small yellow onion, chopped
-Dash of salt and pepper

In the bowl of a food processor combine the brie, butter, beer, heavy cream, chives, paprika, caraway seeds, onion, and salt + pepper. Process until fully combined. Top with additional paprika and serve with your pretzels of choice.
