Roasted Balsamic Cranberry Brie Crostini


We throw a yearly Festivus party and thought this recipe would make a nice appetizer. It was pretty easy to put together right before everyone came over and there was minimal clean up.

Ingredients:

-2 tablespoons butter, melted
-2 tablespoons olive oil
-½ a french baguette, sliced thin
-12 ounces fresh cranberries
-2 tablespoons balsamic vinegar
-½ cup sugar
-1 tablespoon rosemary
-4 ounces triple cream brie


In a small bowl, whisk together the butter and olive oil. Brush both sides of the baguette slices with mixture and line them up on a baking sheet. Set aside.
In another small bowl, stir together the cranberries, balsamic vinegar, sugar, and rosemary. Spread the cranberries out on a parchment paper lined baking sheet. And roast for five minutes at 425. After five minutes add the baguette slices to the oven. Roast for six more minutes, then flip the bread. Finally, roast four more minutes and both the bread and cranberries will be ready.
Top each baguette with a slice of brie and a spoonful of cranberries. 





These were a wonderful little appetizer and everyone had good things to say about them. The cranberries are still a little tart, but not tart enough to overpower the rest of the flavors. The brie is light, so it adds a nice neutral background for the cranberry and balsamic flavor.
