Loaded Crispy Tofu Tacos


Tacos are one of my favorite things to eat -- they're so incredibly versatile, they're something that I could never get bored eating. Tofu tacos aren't unusual, but the crispy breading and the sauce on the tofu really makes this recipe special.

Ingredients:
-1 package firm tofu, pressed and then cut into cubes
-1 tablespoon Sriracha
-1 tablespoon honey
-1/2 cup fine cornmeal
-1 teaspoon chili powder
-1 teaspoon cumin
-1/2 teaspoon salt
-1/2 teaspoon garlic powder
-1/8 teaspoon pepper
-1/4 cup oil
-3 scallions
-1/4 cup Greek yogurt
-warm corn tortillas

Optional Toppings
-shredded cheese
-chopped tomato
-avocado
-lime wedges

In a large shallow bowl, stir together the honey and sriracha. Then toss the tofu in the sauce. Make sure it's well coated, because it will help the breading stick to the tofu later.

In another shallow bowl, combine the cornmeal, chili powder, cumin, salt, garlic powder, and pepper. Toss the tofu in this dry mixture until well-coated. You want the tofu to be crispy, so don't leave any bare spots.

Heat a small amount of oil in a medium skillet and then fry the tofu pieces until crispy on all sides.

Top the desired amount of corn tortillas with the crispy tofu, Greek yogurt, shredded cheese, chopped tomato, and avocado.




The sriracha/honey sauce that coats the tofu before it is fried adds an interesting spicy/sweet flavor to the tofu. I really liked the flavor that it imparted to tofu which is pretty flavorless on its own, the crispy coating also adds a nice dimension to the tofu. The breading was well seasoned and the cornmeal really helped to crisp up the tofu. This is a taco recipe that I will certainly be making again.
