Spicy Kale + Coconut Stir-Fry


This recipe comes together pretty quickly, I made this one evening before we went out to eat so that we would have leftovers for lunch the next day. I hate when we need to rely on take-out at lunch time, especially when a dish like this is so easy to put together.

Ingredients:
-2 tablespoons vegetable oil
-2 eggs, beaten with a dash of salt
-2 big cloves garlic, minced
-1/2 bunch green onions, green and white parts, thinly sliced (about ¾ cup)
-1 medium bunch kale, ribs removed and leaves finely shredded
1/4 teaspoon fine grain sea salt
-3/4 cup unsweetened shredded coconut 
-2 cups cooked and chilled brown rice
-2 teaspoons reduced-sodium soy sauce
-Juice from one lime

Heat a large wok over medium-high heat. Once the pan is hot enough that a drop of water sizzles on contact, add 1 teaspoon of oil. Pour in the eggs and cook, until the eggs are scrambled and lightly set. Transfer the eggs to your empty bowl.

Add one tablespoon of oil to the pan and add the garlic and onions. Cook, while stirring, for 30 seconds or longer, until fragrant. Add the kale and ¼ teaspoon salt. Continue to cook, stirring frequently, until the kale is wilted. Transfer the contents of the pan to your bowl of eggs.

Add the remaining two teaspoons of oil to the pan. Pour in the shredded coconut and cook, stirring frequently, until they are lightly golden. Be careful, because mine started to burn a little. Add the rice to the pan and cook, stirring occasionally, until the rice is hot, about 3 minutes.

Pour the contents of the bowl back into the pan. Add your 2 teaspoons soy sauce and chili garlic sauce. Stir to combine and then transfer the contents to two serving plates or back to your bowl. Squeeze the juice of ½ of a lime over the dish.


  
I'm always a little nervous to use chili garlic sauce in recipes, because it packs a pretty powerful punch, but this included just enough to help add the right amount of heat. I thought that the portions on this were great as well, this left me satisfied after lunch, but not overly stuffed. This is the kind of lunch that makes your coworkers jealous of your lunch, it seemed like the kind of dish that took time to prepare and put together, but really it was easy.
