Apple Bagel Sandwiches
This turned out to be really great, my mom and I ate this for a brunch at home. We thought the glaze on top was perfect, it didn't really taste spicy, but the cayenne had just the perfect amount of flavor.
I adjusted this recipe from the one in Midwest Living.
Ingredients:
-1/4 cup strawberry jelly
-2 teaspoons lemon juice
-cayenne pepper
-cinnamon
-nutmeg
-2 small red and/or green apples
-2 small red and/or green apples
-cream cheese
-4 bagels
-4 bagels
Mix the jelly, lemon juice, and cinnamon, nutmeg, and cayenne. I just used about an equal pinch of each. |
Mix cream cheese with another pinch of cinnamon and nutmeg. |
Cut the apples into thin slices. I put them on a hot grill pan for about a 2 minutes on each side. |
Spread cream cheese on bagels. |
Top with apples. |
Drizzle with the glaze. |
A suggestion on the original website was to top with walnuts or pecans, I didn't do that this time, but I think it would try it that way next time. Another thing in the original recipe was to use pumpkin cream cheese, which I tried to duplicate by using a faux pumpkin pie spice, cinnamon and nutmeg, but I think I would try it again using actual pumpkin filling.
