Open-Faced Broiled Egg, Spinach, and Tomato Sandwich

Happy Sandwich Wednesday! This is the first post for my 2016 sandwich series, so I wanted to start out with something simple. This open-faced sandwich is easy to prepare, but packed with flavor.

-1/2 whole wheat English muffin
-1/4 cup fresh spinach, cooked and drained (1-2 ounces)
-1 slice tomato
-1 hard-boiled egg, coined
-1 1/2 teaspoons mayonnaise
-salt and pepper, grated Parmesan, to taste

Top English muffin with spinach, tomato, overlapping egg slices, and mayonnaise. Sprinkle with Parmesan cheese and season with salt and pepper.

Broil for a few minutes and watch for the ingredients to look lightly toasted, then remove and serve.

A perfect light meal or satisfying snack, the egg protein will keep you full for a wihle and the spinach and tomatoes add a nice vibrancy of color with lots of nutrients. The mayonnaise adds moisture and salt, and the firm English muffin gives it a good bite. Since most of these ingredients come in packages and you're not using it all, you should have plenty left over for several more sandwiches during the week.
