Toasted Oatmeal with Strawberry Chia Seed Jam
My friend Steph over at Whatever Pieces has been doing a series called New Food Friday. Her March 4th post was all about chia seeds, so I decided to give this recipe a go after stumbling across the photo on Pinterest. We're lucky to have a bulk section in our grocery store and that's where we purchased our chia seeds, if you don't have a bulk ingredients section try looking in the baking or health foods aisles.

Ingredients:
Strawberry Chia Jam
-8 ounces of strawberries
-2 to 3 tablespoons honey
-1 tablespoon chia seeds
Toasted oatmeal
-1 to 2 tablespoons butter
-2 cups rolled oats
-1½ cups + 2 tablespoons water
-½ cup milk of choice (I used vanilla almond milk)
-Generous pinch kosher or sea salt
-Pinch of ground cinnamon
-Pinch of ground ginger
Start the jam first, in a medium saucepan, combine the berries and honey. Cover and bring to a simmer over medium heat, stirring frequently. Once the berries are warmed throughout and saucy (5 minutes or more), lightly mash the berries with a fork. Reduce the heat to medium low. Stir in the chia seeds and cook, stirring frequently, until the jam is reduced about 15 to 20 minutes. Remove from the heat to allow the jam to thicken up a little more.

White the jam is thickening prepare the toasted oatmeal. Melt the butter in a large skillet over medium heat then add the oats stir occasionally until fragrant, about 5-8 minutes.
In a large pot combine the milk, water, salt, cinnamon and ginger. Bring the mixture to a boil and then add the toasted oats and gently stir to incorporate the oats into the liquid. Turn the heat off and let the pot of oats sit on the burner, covered, for about 7-8 minutes. After that time check to see if all of the liquid has absorbed, if not, give them a little more time.
Serve the hot toasted oatmeal alongside the strawberry chia seed jam, and a little whipped cream.
