Spinach Feta Macaroni and Cheese
I've been searching for some time for a macaroni and cheese recipe that still felt like comfort food, without all of the excess calories. Pretty much every recipe I tried still tasted like "diet food" or was way too indulgent for a week night dinner. This macaroni and cheese recipe has a nice cheesy sauce, and the calories per portion isn't too bad either.

Ingredients:
-2 tablespoons olive oil
-1 yellow onion, diced
-pinch of salt
-2 garlic cloves, minced
-2 fresh tomatoes, diced
-1 bag fresh baby spinach
-1/2 cup crumbled feta cheese
-1/2 cup cubed white cheddar cheese
-1/4 cup part skim shredded mozzarella cheese
-2 cups small shaped pasta
-1 cup low sodium vegetable broth
-1 cup 1% milk
-½ teaspoon Italian Seasoning
-salt and fresh ground pepper, to taste
-parsley for garnish
Heat olive oil in a large pan over medium-high heat, then add the onions and pinch of salt; cook for 2 to 3 minutes. Stir in garlic and continue to cook for 30 seconds, or until fragrant. Add tomatoes, spinach, cheeses, macaroni, vegetable broth, milk,and seasonings. Stir to combine the ingredients.
Bring to a boil, stirring frequently. Lower heat to a medium-low, cover with lid and continue to cook for 12 to 15 minutes, or until pasta is cooked. Make sure to stir every few minutes to prevent any sticking.
Once the pasta is cooked through remove from the heat and stir once more.
This recipe is all made in one pot which is nice, some mac and cheese recipes have you using two or three pots just to mix everything together in the end. I appreciated the ease of clean-up due to using only one pot. I thought this recipe tasted fantastic and I was very happy with how simple it was to prepare.
