Italian Roasted Vegetables


I wanted to do something simple for the side since the drink and main dish were more complicated than usual. For us it was a resounding fail. Even though I thought I had heavily seasoned everything, the vegetables just came out tasting a little bland. You cannot season this dish too much, with more seasoning everything will taste so much better. I also wish I had added broccoli or something green to make this more Christmas-y.

Ingredients: 
-1 lb cremini mushrooms cleaned
-2 cups cauliflower cut into small florets
-2 cups cocktail tomatoes
-12 cloves garlic peeled
-2 tbsp olive oil
-1 tbsp Italian seasoning
-salt and pepper to taste

Preheat oven to 400 F degrees.

In a large bowl combine the mushrooms, tomatoes, cauliflower, and garlic. Drizzle with the olive oil and season. Toss to combine.

Pour the veggies out on a baking sheet and roast for 20-30 minutes or until the cauliflower is tender.
