Baked Brie with Maple Roasted Cranberries


Happy holidays and welcome to another Vegetarian and Cooking holiday dinner! Every year we cook a four course meal with a cocktail so that you can see a full vegetarian holiday spread and how those recipes work together to form a satisfying and interesting meal. Of course, all of these recipes are also good on their own too, especially this stunning appetizer. The red, green, and white really pop and the ingredients are easy to keep on hand for unexpected holiday company.




Baked brie recipes are some of our favorite appetizers, I thought everything in this went really well together and if I had do do anything differently I would drizzle some warm maple syrup over the top of the finished product to really pack on that maple punch. Otherwise, this was so easy to do and looked and tasted festive.

Ingredients: 
-1 1/2 cups fresh cranberries, rinsed
-2 tablespons maple syrup
-1 wheel of brie cheese

optional garnish
-fresh rosemary sprigs

The maple syrup is also leftover from our wedding, we had New Hampshire maple syrup as a nod to Dave's home state. 


Set oven to 375F

Spread the cranberries out in a single layer in a baking dish. And pour the maple syrup over the berries, stir to make sure they are coated.


  

Roast for about 15-20 minutes until the cranberries are starting to burst.

Put a round of Brie in a small skillet or small baking dish. Top with the roasted cranberries and bake for another 7 or 8 minutes, just until the cheese is runny.

Garnish with some rosemary sprigs, and then serve immediately with sliced baguette.
