Grilled Goat Cheese Sandwiches with Fig and Honey

This grilled cheese is more of a breakfast grilled cheese and it's from Cooking Light, so it's not a heavy sandwich. Based on how sweet the finished product is, this could probably be considered a dessert grilled cheese. When I calculated everything in My Fitness Pal it came up as 262 calories for one sandwich, which is pretty reasonable. Dave agreed that it was more of a dessert, but in addition to the sweetness we loved the creamy filling, and toasted crunch with each bite.

Recipe from Cooking Light.

Ingredients:
-2 teaspoons honey
-1/4 teaspoon lemon zest
-1 (4-ounce) package goat cheese
-8 slices cinnamon bread
-2 tablespoons fig preserves
-2 teaspoons thinly sliced fresh basil
-Cooking spray
-1 teaspoon powdered sugar

In a small bowl combine the honey, lemon zest, and goat cheese until well blended. Spread 1 tablespoon of the goat cheese mixture onto 4 of the bread slices. Top with 1 1/2 teaspoons of fig preserves and 1/2 teaspoon of basil. Top with the remaining bread slices to make four sandwiches.

Lightly coat the top of the bread with cooking spray and lay the completed sandwich sprayed side down in a hot skillet. Cook for 3 minutes and then spray the top of the sandwiches with cooking spray before flipping over and cooking for 3 more minutes. Repeat with any remaining sandwiches until all are toasted. Sprinkle each sparingly with powdered sugar and enjoy.
