Honey Pecan Grilled Peaches
We love grilling in the summer and since we have a charcoal grill we always want to maximize each use. This grilled peach recipe was served with the Grilled Green Bean Salad recipe that I posted yesterday. There was plenty of room on the grill to accommodate the peaches and green beans at the same time but since the green beans cooked for less time once the peaches were flipped we were able to spread them out more.
The filling in this is sweet and pairs nicely with the charred peaches. I added pecans and crushed biscotti for crunch since the peaches and filling are both soft. If you wanted to use plain cream cheese or neufchatel and then mix in a different kind of nut this would be just as good.

Ingredients:
-Four ripe peaches, halved and pitted
-8 tablespoons honey pecan cream cheese
-1/8 teaspoon cinnamon
-1/4 teaspoon vanilla extract
-2 tablespoons chopped pecan halves
-1/2 biscotti cookie, crushed
-mint leaves for garnish
-olive oil for grilling
In a small bowl combine the honey pecan cream cheese, cinnamon, and vanilla extract. Set aside.
Preheat your grill and brush the cut side of the peaches with olive oil. Place the peach halves cut side down on the grill for 6-10 minutes.
To serve, spoon about 1 tablespoon of the ricotta mixture into each peach. Top with pecan halves and crushed biscotti. Serve immediately.
