Cedar Grilled Tofu with Cherry Salsa

This week is CSA free, our farmer takes a vacation during the first two weeks of July and we were on vacation during July 4th as well. Our next box will be ready on July 18th. The Grilled Cherry, Goat Cheese, and Kale Pizza we made a few weeks ago was so good we decided to try another cherry recipe.

For Christmas I gifted Dave a ton of grilling stuff -- kabob baskets, a Himalayan salt block, a variety of spices, and cedar grilling wraps. The cedar grilling wraps seemed like a good alternative to a cedar plank since I had already purchased the Himalayan salt block. There are a lot of different options on Amazon, but I purchased these TruFire Gourmet wraps.

We had fun using the cedar wraps for the first time and this was an interesting way to grill tofu. The cherry salsa was great over top of the savory tofu. The sweet heat from the cherry salsa cuts through the rich smokiness of the grilled tofu, resulting in a complex but balanced composition.

For the cedar plank grilled tofu:
-2 large cedar wraps and twine
-4 tablespoons low sodium soy sauce
-1 tablespoon maple syrup
-1 tablespoon lime juice
-1 teaspoon paprika
-1 garlic clove, minced
-1 (14 ounce) package extra firm tofu, drained and pressed at least 20 minutes.

For the cherry salsa:
-2 cups fresh cherries, pitted and coarsely chopped
-2 tablespoons lime juice
-1/3 cup chopped shallot
-1 jalapeño pepper, seeded and minced
-Salt to taste

Cut the pressed tofu into four even steaks. Stir together the soy sauce, maple syrup, lime juice, paprika and garlic together in a shallow dish. Place the tofu steaks into the dish and allow to marinate while you prep the other ingredients. Make sure to spoon marinade over the tofu every so often so that the entire tofu steak is marinating.

While the tofu is marinating, combine the cherries, lime juice, shallot, and jalapeño pepper in a bowl. Season to taste.

After 20 minutes, soak the cedar wraps and twine in another shallow dish for at least 5 minutes. Remove the wraps from the water and tightly wrap two marinated tofu steaks into each cedar grilling wrap.

Heat an outdoor or indoor grill to medium-high and place the cedar wrapped tofu steaks onto the grill. Cover and cook for 20-25 minutes.

Serve the tofu steaks topped with the cherry salsa.
