Rosemary Roasted Radishes


We received a small amount of radishes in this share so I reduced this recipe to accommodate how many we had. The amount of radishes and each ingredient can certainly be adjusted we just made this with what we had on hand. I also reserved the greens for use later this weekend in another recipe. Whenever we receive produce with greens we always try to use all parts of the plant. I wasn't planning to share this since we had so few radishes, but Dave and I both really liked this take on them. The seasoning was great and really added to the flavor of the radishes.

Ingredients:
-3 bunches radishes, washed, cleaned, and quartered (if you have large radishes)
-Cooking spray
-2 teaspoons fresh rosemary, roughly chopped
-salt and pepper, to taste

Since these radishes were so small I just trimmed the ends rather than quartering them.

Spray the radishes liberally with cooking spray and then season with rosemary and salt/pepper. Roast for 20-30 minutes at 300 or until fork tender.
