Bok Choy Salad with Sesame Dressing
This salad is a great way to utilize fresh summer lettuces and green beans, combining bright flavors of vinegar and scallion with more complex notes from the sesame oil and honey, all together with the crunch of toasted ramen and sliced almonds. The balance of flavors and textures is the hallmark of this dish, that will make it a welcome meal or side.

Ingredients:
Sesame Dressing
-2 tablespoons honey
-1/4 cup olive oil
-2 tablespoons red wine vinegar
-2 teaspoons sesame oil
-1 tablespoon soy sauce
Salad
-1 package ramen noodles crumbled, without seasoning packet
-1/4 cup sliced almonds
-1 bunch bok choy sliced (2 cups)
-1 cup shredded lettuce
-5 scallions
-1/2 cup green beans, cut to 1 inch pieces
Break apart ramen noodles and toast for a few minutes in a skillet over medium-low heat, with sliced almonds.
Toss the bok choy, lettuce, scallions and green beans together, mix in dressing and toss again. Serve salad topped with toasted ramen and almonds.
