Grilled Barbeque Onion and Smoked Gouda Quesadillas


Happy Grilling Wednesday! This is an early post because Dave and I are leaving on a plane this morning. We're going to visit his family in New England for six days (don't worry I will still make regular posts). I'm excited to meet Dave's family and he's excited to go back home for a little bit, so we're anticipating a fun trip. Just like with the Georgia Trip and my England Trip in 2012 expect a Food Tour blog post when I get back.

This grilling post is something that will take you away from the burger rut. The flavors are still summery and the recipe is incredibly easy to grill. The smoked gouda cheese adds to that summertime grilled taste.

Ingredients
-3 tablespoons olive oil
-1 large yellow onion
-½ cup barbecue sauce
-2 tablespoons water
-Around 1 teaspoon hot sauce 
-6 to 8 ounces smoked Gouda cheese
-8 flour tortillas

Heat the olive oil. Add sliced onions and saute for about 5 minutes, until almost soft. Add ½ cup barbecue sauce and 2 tablespoons water; stir until onions are evenly coated, 2 minutes. Remove from heat and add hot sauce to taste.

Build the quesadillas on a well oiled grill. Lay down a tortilla. Spoon on some onions and then add a hefty portion of grated cheese. Fold and then cook until the cheese is melted and grill marks form. 









These were a hit. I think the smoked gouda really helped tie the dish together. Ours turned out a little spicy because I used a hot barbecue sauce and added some hot sauce, but you can make this as mild as you like. The original post called for two onions, I really think that one onion was plenty.
