Goat Cheese Guacamole

Guacamole is such a great summer appetizer or light snack. This recipe incorporates some unexpected ingredients which are full of flavor. The ingredient list and prep are very simple so that you can focus on other parts of your menu or on this gorgeous weather.

-1 ripe avocado
-2 tbsp freshly squeezed lemon juice
-30 g soft goat’s cheese, crumbled
-2 tbsp fresh green onion, chopped
-3 large pieces sun-dried tomatoes, drained and chopped
-Black pepper

Mash the avocado with the lemon juice. Then add the remaining ingredients (season to taste). Serve with tortilla chips, pita bread or vegetables.

Dave and I enjoyed this as a light dinner. All of the flavors went great together, the salty flavor of the sun-dried tomatoes went well with the smooth flavor of the goat cheese. Both shined against the background of guacamole. This is something I would make again.
