Spiked Hummus
On our first date Dave and I went to a great restaurant in a nearby city called 91. Dave's not a vegetarian, but when we go out we'll both get a vegetarian dish to split. After our appetizer I enjoyed buffalo tofu tacos with a jicama slaw and Dave had a ravioli served in brown butter sauce with roasted squash. Prior to that we enjoyed this Spiked Hummus appetizer. This was a recipe which was easy for us to put together and this copy was just as flavorful as the original.

Ingredients:
-Roasted red pepper hummus
-BBQ Sauce
-Mozzarella Cheese
-1 red pepper diced
-1/2 red onion diced
-BBQ Sauce
-Mozzarella Cheese

-Sour cream
-Chives, minced
-Corn tortillas, sliced into chip size pieces
-Oil, for frying

Put as much hummus as desired into an oven proof dish. Sprinkle with mozzarella and bake 8-10 minutes at 350. |
Saute the diced pepper and onion in butter until softened. |
While the hummus bakes, fry up as many tortilla chips as you desire to have. |
You'll want them to be golden. |
Layer BBQ sauce, the pepper/onion mixture, sour cream and chives on the hummus. |
Enjoy with the tortilla chips. |
This was very good. The unexpected flavor profile comes from the BBQ sauce paired with the roasted red pepper hummus. The pepper and onion adds a nice fresh element. The best bites of this will have all of the ingredients on the tortilla chip. This was a pretty good match to the appetizer Dave and I enjoyed at 91 on our first date.
