Spiked Hummus


On our first date Dave and I went to a great restaurant in a nearby city called 91. Dave's not a vegetarian, but when we go out we'll both get a vegetarian dish to split. After our appetizer I enjoyed buffalo tofu tacos with a jicama slaw and Dave had a ravioli served in brown butter sauce with roasted squash. Prior to that we enjoyed this Spiked Hummus appetizer. This was a recipe which was easy for us to put together and this copy was just as flavorful as the original.

Inspired by 91's Spiked Hummus.

Ingredients:
-Roasted red pepper hummus
-BBQ Sauce
-Mozzarella Cheese
-1 red pepper diced
-1/2 red onion diced
-Sour cream
-Chives, minced
-Corn tortillas, sliced into chip size pieces
-Oil, for frying


Put as much hummus as desired into an oven proof dish.
Sprinkle with mozzarella and bake 8-10 minutes at 350.


Saute the diced pepper and onion in butter until softened. 

While the hummus bakes, fry up as many tortilla chips as you desire to have.
You'll want them to be golden.
  
Layer BBQ sauce, the pepper/onion mixture, sour cream and chives on the hummus.


Enjoy with the tortilla chips.

This was very good. The unexpected flavor profile comes from the BBQ sauce paired with the roasted red pepper hummus. The pepper and onion adds a nice fresh element. The best bites of this will have all of the ingredients on the tortilla chip. This was a pretty good match to the appetizer Dave and I enjoyed at 91 on our first date.
