Swiss, Fig Jam and Spinach Sandwiches
I am not a jam eater. I have spent 23+ years enjoying sandwiches and biscuits jam free and I fully intended to keep it that way. Then I met Dave who has a preference for choosing odd jams and preserves for his peanut butter sandwiches. The first peanut butter sandwich he gave me included cherry preserves, I was hooked. We already had this fig jam on hand for peanut butter + jam concoctions, if you don't, I promise it is worth the investment.

Ingredients:
-1 tablespoon unsalted butter
-1 tablespoon flour
-1/3 cup milk
-4 ounces swiss cheese, freshly grated
-1 pinch of nutmeg
-1 cup fresh spinach
-2 teaspoons olive oil
-1/4 teaspoon salt
-1/4 teaspoon pepper
-4 slices wheat bread
-2 large eggs, cooked as desired
-1/3 cup fig jam
To make the sandwiches, melt butter in a sauce pan and add the bread slices. Spread fig jam onto half. |
Add the cheese sauce to all slices of bread. And then add spinach to as many pieces as desired. |
We made an egg over-easy for one sandwich and scrambled eggs for the other. |
Once the sandwiches are golden brown on the outside, remove from the skillet and add the eggs. |
Put the pieces together. |
And then enjoy. |
