Cast Iron Fondue
One of my favorite restaurants is the Melting Pot. Every course is served in a fondue pot, it's great for a dressy date night or a fun girls night out. This cast iron fondue was awesome and perfect if you do not have a fondue pot. The cast iron skillet will stay hot for a long time and will keep the cheese melted.

Ingredients:
-2 tablespoons extra-virgin olive oil
-1 large garlic clove, finely minced
-1/2 pounds Italian fontina, rind removed and small-diced*
-Handful of shredded Italian Blended cheese
-½ teaspoon dried thyme leaves
-cayenne pepper, optional for a little heat
-kosher salt and freshly ground black pepper
-crusty French baguette, for dipping
*This was meant to serve four people, but there were only two of us. I cut the cheese down to half a pound, rather than 1-1/2 pounds the original blogger used.

First add oil to the skillet and swirl it around the pan. Add all other ingredients, except the baguette, to the skillet. |
Broil for 5-7 minutes or until the cheese is melted. |
Season with salt, pepper and cayenne again if desired. |
We loved this fondue! This is the perfect snack if you really need comfort food, the garlic got a little crispy in the pan and the cheese was incredibly flavorful with all of the seasoning. I think this served two really well, but you can use the original amount of cheese if you want to serve four.
