Buffalo Tofu Salad
Getting greens in our CSA basket every week is forcing me to get creative with what I put into salads. I've made buffalo cauliflower salads in the past and was surprised to see that I've never made a buffalo tofu salad. This uses the mixed greens we received in our CSA, but any greens will do for the recipe. If you aren't a fan of blue cheese, goat cheese or feta would make a wonderful substitution here.

Ingredients:
-1 package extra firm tofu, drained and cubed
-2/3 cups buffalo sauce
-4 cups mixed greens
-3 celery stalks, diced
-2 plum tomatoes, diced
-2 handfuls white corn tortilla chips, crumbled
-1/4 cup ranch dressing
-1/4 cup blue cheese crumbles
Preheat the oven to 350 and toss the tofu in the buffalo sauce. Spread the tofu cubes out in a single layer on a large baking sheet and bake for 20-30 minutes. The tofu should be hot and the sauce should be adhering to the tofu cubes.
Divide the mixed greens, diced celery and tomatoes, corn tortilla chips, blue cheese between two plates. Top the salad with as much buffalo tofu as you'd like and top with ranch dressing.
