Grilled Cherry, Goat Cheese, and Kale Pizza


I've had this recipe saved for so long while waiting for it to be summer again. The previous times that we've tried grilling pizza dough didn't go well, but I was confident that we could make it work (and we bought a pre-made crust for back-up). We used kale from our CSA basket over the top of the pizza and made a side salad with strawberries and watermelon to use up the remainder of our mixed salad greens.

The best bite of this pizza is one that has a little bit of everything, especially if it has the balsamic glaze. The cherries are sweet and tart and the balsamic glaze nicely complements their flavor, while the goat cheese helps to round out the flavors. I was worried about the crust not cooking all the way through, but everything evened out. The middle was certainly more crisp than the edges.

Ingredients:
-1/2 pound pizza dough
-1 tablespoon olive oil
-1 cup cherries, pitted and halved
-2 ounces goat cheese, crumbled
-1/2 cup kale, thinly sliced
-1-2 tablespoons of balsamic glaze
-Salt and pepper to taste

Preheat the grill and then roll out the pizza dough on a floured surface. Brush with olive oil, and bring the pizza dough, the cherries, and the goat cheese outside to the grill.

Place the pizza dough oiled side down on the grill, brush the top of the dough with the remaining oil.

Grill the pizza dough for 3 minutes and then flip to the other side. Top with the goat cheese and the cherries while the underside of the dough cooks. Grill for 3 minutes more and then remove. Top with the kale, balsamic drizzle, and salt and pepper to taste.
