Ground Cherry and Goat Cheese Salad


Yet again our CSA brought us something I had never seen before -- ground cherries, also known as, husk cherries. When Dave first brought the box home I thought that they were just very small tomatillos, and although they are in the same family these are slightly different. The texture of the ground cherries is more like a grape and less like a tomato, and their flavor is very unique. I'm not even sure how to describe it, like the texture of a grape met the flavor of a fresh tomato with an infusion of ripe pineapple flavor, maybe? Our CSA farmer encouraged us to eat them raw so I kept the ingredients limited and the preparation simple. I think going for the herb goat cheese was worth it to add a little pizzazz to the salad.

-Tiger tomatoes
-Tomatoes
-Cherry Tomatoes
-Ground Cherries
-Mixed Greens
-Potatoes
-White Onions
-Red Onion
-Garlic
-Jalapeno
-Cayenne pepper

Recipe from Sugarlaws

Ingredients: 

-4 cups mixed greens, washed and dried
-1/2 pound ground cherries, removed from the husk and washed
-4 ounces herbed goat cheese
-1 tablespoon whole grain mustard
-2 tablespoon white balsamic vinegar
-4 tablespoon extra virgin olive oil
-1/4 teaspoon coarse sea salt
-Pinch of black pepper

In a small bowl combine the mustard, white balsamic, olive oil, sea salt, and pepper. Toss the greens in the dressing and serve topped with the ground cherries and goat cheese.
